Sweet Bannock Bread

is not a valid Image.

1 Cup = My small mug - Use whatever you have, just not too big.

This makes enough for 2 x 1 inch thick patties about 4 inches round.

1 Cup of self raising flour.
1/4 Cup of sugar.
2 Tablespoons of powdered milk.
1 Cup Raisins.
A generous pinch of salt.

Add all the ingredients to a sealable plastic bag for later use.

Add a little water to the mix and knead into a dough, be careful not to add too much as it will ruin it if you do, add sparingly a little at a time.

I cook it in my lidded billycan in the floured steel container that fits in the top.

Cook for 15 to 20 minutes until golden brown.

They are great on their own, even better sliced in half with a little butter and strawberry jam on top.

Vegetarian Curry & Chicken Curry

NOTE - This can be made in one billycan, however it's easier with two pots, one pot for the rice and one pot for the curry sauce, The recipe is for one pot, for two pots, simply remove the rice and salt and cook separately.

Makes enough for two large meals.

4 large handfuls of rice (2 Per serving using two pots)
Salt to taste
2 large chopped chicken breasts (Leave out for the vegetarian option)
1 chopped onion
1 chopped pepper
2 large handfuls of raisins/sultanas
2 large handfuls of split red lentils
4 large chunky sliced mushrooms
3-4 tablespoons of your favourite curry powder
2 Chicken or Vegetable stock cubes
6 sachets of tomato sauce (4 tablespoons) - If you have no tomato sauce available, use 2 tablespoons of sugar

Add the rice and salt to a billycan and cover with 8 cm of water, boil the rice until cooked.

Now add everything else and top up with water, about 8cm above the ingredients.

IMPORTANT - You must not leave the cooking at this point or it will weld itself to your billycan. (Two pots require less attention)

Bring everything to the boil and then move the billycan to a gentle simmer position, stirring occasionally, after 10 minutes the lentils should have absorbed all or most of the water.

Top up with water again by about 4cm above the curry, simmer and stir every few minutes for the next 10 to 20 minutes until the lentils have broken down to a mush and thickened the curry.
